Southwestern Lentil Salad

- 2 cans black beans, rinsed and drained (15 ounces each) shopping list
- 3 cups cooked lentils shopping list
- 1 1/2 cups fresh or frozen corn shopping list
- 1 cup red onion, chopped shopping list
- 1 cup green pepper, chopped shopping list
- 1/4 to 1/2 cup minced fresh cilantro (you can use parsley if you want) shopping list
- 1 cup vegetable oil shopping list
- 1/2 cup cider vinegar shopping list
- 1 tablespoon Dijon mustard shopping list
- 1 1/2 teaspoons ground cumin shopping list
- 1 to 2 garlic cloves, minced shopping list
- 1/2 teaspoon salt shopping list
- 1/4 teaspoon pepper shopping list
How to make it
- In a large bowl, combine the first 6 ingredients.
- In a jar with a tight fitting lid, combine the remaining ingredients and shake well.
- Pour over vegetables and toss.
- Cover and refrigerate for at least 2 hours.
