Clam Soup

- 2 dozen clams chopped shopping list
- 1 teaspoon salt shopping list
- 1 quart milk shopping list
- 2 teaspoons freshly ground black pepper shopping list
- 1 small white onion chopped shopping list
- 3 tablespoons butter shopping list
- 6 stalks celery chopped shopping list
- 1 cup heavy whipping cream whipped shopping list
- Chopped parsley shopping list
How to make it
- Put chopped clam pieces in large soup kettle with their own liquid or juice and bring to a quick boil.
- In a separate pot scald the milk with the onion and celery in it.
- Let this mixture simmer for 5 minutes and then strain off the milk.
- Add the milk to the clams in the kettle just before serving.
- Do this gradually so the milk will not curdle.
- Season to taste with salt and pepper.
- Put small piece of butter in each cup before serving.
- Garnish with whipped cream and finely chopped parsley.
