How to make it

  • Put chopped clam pieces in large soup kettle with their own liquid or juice and bring to a quick boil.
  • In a separate pot scald the milk with the onion and celery in it.
  • Let this mixture simmer for 5 minutes and then strain off the milk.
  • Add the milk to the clams in the kettle just before serving.
  • Do this gradually so the milk will not curdle.
  • Season to taste with salt and pepper.
  • Put small piece of butter in each cup before serving.
  • Garnish with whipped cream and finely chopped parsley.
