How to make it

  • Set oven to 109oC and line (or grease) a cookie tray.
  • Put first three ingredients in a blender and blend until combined. Add the last three ingredients and blend until a dough forms.
  • Shape into a large sausage shape and roll in sugar.
  • Cut into slices (8-10mm) and arrange on a tray.
  • Bake for 10-12 minutes until just turning golden brown.

    I will definitely want to make your shortbread cookie recipe. I made shortbread more than 15 years ago. I had used a mold that was specifically made for shortbread and due to the fact that the shortbread stuck to the mold and I had greased it as advised I never made it again. I will let you know how your shortbread turns out.
