Ingredients
  • 1/2 block butter (250g)
  • 1/2 cup caster sugar (fine sugar)
  • 1/2 cup icing sugar
  • 1/2 cup custard powder
  • 2 cups flour
  • 2 Tblsp water

Directions
  1. Set oven to 109oC and line (or grease) a cookie tray.
  2. Put first three ingredients in a blender and blend until combined. Add the last three ingredients and blend until a dough forms.
  3. Shape into a large sausage shape and roll in sugar.
  4. Cut into slices (8-10mm) and arrange on a tray.
  5. Bake for 10-12 minutes until just turning golden brown.

I will definitely want to make your shortbread cookie recipe. I made shortbread more than 15 years ago. I had used a mold that was specifically made for shortbread and due to the fact that the shortbread stuck to the mold and I had greased it as advised I never made it again. I will let you know how your shortbread turns out.
