Ingredients
  • Egg Mixture
  • 6 beaten eggs
  • 1 teaspoon vanilla
  • 1 teaspoon salt
  • 2 tablespoons sugar
  • 1 and 1/2 cups of milk
  • Blend above ingredients together and put into a shallow pie plate
  • Stuffing Mixture
  • 8 ounces of cream cheese
  • 1 teaspoon vanilla
  • Beat together in mixer until blended
  • Add 1/2 cup chopped pecans or walnuts

Directions
  1. Spread filling thinly on a slice of firm bread sliced 1" thick. Place second slice of bread on top making a sandwich. Dip sandwich in egg mixture and place on greased electric griddle or skillet. Sprinkle cinnamon on top of sandwich. Cook until browned on both sides. Cut sandwich diagonally and place on serving plate. Drizzle apricot sauce over sandwich and garnish with bananas sliced diagonally and a slice of kiwi.
  2. Apricot Sauce
  3. 12 ounces of apricot preserves
  4. 1/2 cup of orange juice
  5. Mix and warm in the microwave
