Onion Soup Recipe

We do get a lot of ready-made soups in the market, but I prefer home-made soups - because its easy to make, nothing can beat it. One of his favourites is Onion soup. This is how I make it. Ingredients

Onions - 750g

2 large tbsp butter

Oil - 1 tbsp

Salt and Pepper

A pinch of sugar

Flour - 1 tbsp

Stock - 1.5 l

White wine - 125ml

For Garnish

12 slices of French bread

Olive/ salad oil - 1 tbsp

Halved Garlic cloves

Grated cheese - 100g

Directions

Cook the sliced onions in butter and oil until they are soft. Remove the lid of the pan and raise heat to a moderate flame. Stir the seasoning and sugar in and cook for about 40 minutes. Stir frequently.

Wait till the onions turn a deep brown. Stir in the flour and cook for 3 minutes. Pour in the hot stock and stir again to blend.

Now add wine. Simmer it for a while. Rub the garlic cloves on the surface of the bread. Sprinkle with cheese and serve it hot.

This is a very authentic French-style onion soup, and very much like I make it too... Most do not use garlic to rub the bread, but it really is good! Thank you, Maddie :)
