Country Pork Sausage Old Recipe
Make homemade sausage for your special breakfast or brunch. It is so easy to make. Family, friends, and guests will love it! The smell of frying sausage and the aroma of coffee is the best alarm clock in the world!

Ingredients
  • 2 pounds lean pork ham
  • 1 pound pork shoulder with a little fat
  • 1 rounded teaspoon sage
  • 1 rounded teaspoon red pepper
  • 1 rounded teaspoon black pepper
  • 1 rounded teaspoon salt

Directions
  1. Tell your butcher to grind the pork for sausage, OR you may prefer to grind it yourself!
  2. In large bowl, place gound pork
  3. Add seasonings to ground pork
  4. Mix well with utensil or hands
  5. Let set in refrigerator a few hours before cooking or make into patties and stack, placing waxed paper between slices
  6. When ready to cook, place patties in frying pan and fry as usual
  7. NOTE: This is a very simple, old country Pork Sausage Recipe that was given to me years ago. And it was old then.

Question... the ham... that a smoked one.. or fresh?


Have only made it with fresh ham, but it might be interesting to use the smoked ham. Actually, I have wondered if smoked ham could be used, and don't know why it couldn't be used.
This recipe is so old and knowing how my grandparents made sausage, I have used the fresh ham. Sometime ago, a country store in the vicinity made their own sausage, and I always thought it was made from smoked ham....but it was their "secret recipe"! Anyway, don't know why the smoked ham wouldn't work...but would need to use less salt.


Oh me and sausage go way back hahahahaahah
