Chinese mabo doufu is a very famous chinese food that has become an international dish, it's very hot, has a very strong flavor and you can eat bowls of rice with it :)

Ingredients
  • 350 grams firm tofu diced in 1 inch. squares
  • 100 grams ground pork
  • 1 tbs of cooking oil
  • 1 teaspoon of sesame oil
  • 1 small piece ginger, minced
  • 2 cloves of garlic, minced
  • 1 chilli, minced
  • 1 teaspoon of sechuan pepper, roasted, ground
  • 2 tbs of dou ban jiang (chili bean sauce)
  • 3 tbs of Soy Sauce
  • 1 Cup of stock
  • pinch of sugar
  • 3 tbs of chinese rice wine
  • 1 teaspoon corn flour dissolved in 2 tbs of water
  • 1 spring onion, finely slicced

Directions
  1. With 1 tbs oil saute ginger and garlic until fragant add dou ban jiang.
  2. Add ground pork, stir fry until pork is brown , add sugar to caramelize, add soy sauce.
  3. when it's fragant Add stock, rice wine, and tofu
  4. cook until sauce is absorbed, add sesame oil, corn flour mixture to thicken the sauce.
  5. garnish with finely sliced spring onion, served

Traditionally it uses beef, not pork.
