Ingredients
  • 1/2 cup couscous
  • 1 cup stock
  • 1 tsp. curry
  • 3/4 tsp. salt
  • 1/4 tsp. pepper-fresh ground
  • 2 tsp. extra virgin olive oil
  • 3 Tbs. raisins
  • 1/3 bunch celantro, chopped
  • 3 Tbs.slivered almonds, toasted

Directions
  1. pour couscous in a bowmix
  2. everything else in a saucepan except celantro and almonds, and bring to a boil
  3. remove from heat and pour over couscous and seal bowl with plastic wrap
  4. alow to sit 10 minutes.
  5. fluff couscous up with a fork, top with cilantro and almonds
