This dip is super easy when unexpected company pops in.

Ingredients
- 2 cups Onions, finely chopped
- 1 1/2 teaspoons Extra Virgin Olive Oil
- 1 cup Sour Cream
- 1 teaspoon Paprika
- Salt and Pepper to taste
Directions
- Cook onions in the EVOO for about 3 minutes, or until just soft.
- In a medium bowl stir the onions, sour cream, paprika, salt and pepper until smooth.
- Serve with fave veggies, chips, or crackers.
