Toffee Recipe
This is a nice toffee recipe with chopped nuts in it, but you could leave the nuts out if you wanted to.. the recipe comes out of the Woman's Day Encyclopedia of Cookery..

Ingredients
  • 1 2/3 cup of sugar superfine if you can find it
  • 2/3 cup dark corn syrup
  • 1/3 light cream
  • 1/4 cup butter
  • 1/2 teasp. vanilla
  • 1/3 nuts finely chopped

Directions
  1. combine sugar, corn syrup, and cream in a heavy pot. cook over med heat stirring constantly until the sugar dissolves
  2. add butter
  3. turn heat to low and cook, stirring occasionally until it reaches 260' on the candy thermometer.
  4. remove from heat and stir in vanilla and the nuts
  5. stir for 2 mins.
  6. pour into a greased 8 x8 pan.
  7. when almost set, mark into squares with a knife.
  8. when cold cut or break
  9. makes 1 1/3 LB
