Ingredients
  • 1 cornish hen split in half,back saved for anouther dish
  • 1/3 cup currant jelly
  • 1/4 cup apple cider or sweet dessert wine
  • 1/2 tsp. dried thyme
  • 1 1/2 tsp. dried,rubbed sage
  • cooking spray

Directions
  1. preheat over to 450F.
  2. stir jelly,thyme and cider or wine and 1/3 of the sage in a non reactive sauce pan over medium heat for about 3 minutes, until glaze is reduced by 1/3.
  3. season hen halves with remaining sage and salt and pepper to taste
  4. spray halves with cooking spray and roast about 25 minutes, or cooked through,basting frequently
  5. serve with remaining glaze spooned over the hen
