Visiting my uncle's farm where homegrown veggies and greens were the mainstay, this salad made with Black-Seeded Simpson leaf lettuce was and still is my favorite mix.

Ingredients
  • 2 handfuls of fresh black-seeded simpson leaf letteuce
  • 1 med onion, very thinly sliced
  • 1/2 cup fresh dairy cream
  • 1 tablespoon sugar
  • 1 tablespoon vinegar
  • 1/2 teaspoon salt
  • dash of black pepper

Directions
  1. Wash lettuce leafs then tear them in half lengthwise
  2. Combine lettuce and onion, stir together in bowl.
  3. Mix together remaining ingredients
  4. Pour over lettuce and onion
  5. Toss well.
  6. Cover and chill well.
  7. Options: Any leaf lettuce or combination of greens can be used.
  8. Or use 2 cups of cucumbers thinly sliced instead of lettuce.
  9. Goes great with any meat or main dish.

Oh my. I've just made this to chill for dinner (to go with pork pot roast and honey glazed carrots), and I fear it might not make it till then! ;-) Absolutely DELISH.
