Ingredients
  • 1 med/large onion finely chopped
  • 12 roma tomatos seeded 1/4" dice
  • 10-15 jalapeno peppers seeded 1/8" dice
  • 1-2 habanero peppers VERY finely chopped
  • 3 yellow banana peppers seeded 1/8" dice
  • 5 cloves FRESH garlic, pressed
  • 1/3 cup cider vinegar
  • 1/4 cup extra virgin olive oil
  • 2 tbs sugar
  • 2 tbs oregano
  • 2 tbs basil
  • 1 tsp fresh ground black pepper
  • A few dashes of your favorite hot sauce, Tabasco works well
  • 1 tsp salt

Directions
  1. DO NOT touch you eyes while preparing this
  2. Mix all ingredients except salt in large bowl.
  3. Refrigerate at least 1 hour, 2 is better
  4. Add salt, mix and serve.
  5. I like to serve "Scoops" tortilla chips with this.

I use gloves when cutting the chili...this helps as well. ;)

Alterations


Never had this with cider vinegar, but I love vinegar so I'll try it that way next...I use fresh lime juice and also have added diced avocado to the mix. To give it a different taste replace the oregano and basil with fresh cilantro..yum!
