Bacon and cheese macaroni

- 300g flour shopping list
- 1 pinch salt shopping list
- 3 medium eggs, beaten shopping list
- 250ml (approx) cold water shopping list
- 50g melted butter shopping list
- 150g bacon bits or chopped bacon rashers shopping list
- 2 cloves garlic, crushed shopping list
- 250ml double cream shopping list
- Pinch of nutmeg shopping list
- black pepper, to season shopping list
- 100g fontina or cheddar cheese, grated shopping list
- 100g unsalted butter, to grease the dish and a little to dot over the top to help the glaze. shopping list
- 60g parmesan shopping list
How to make it
- Bring a large pan of salted water to the boil.
- Sift the flour and salt into a large glass bowl and add the beaten eggs mixing together with a wooden spoon.
- As the dough gets thicker add a little water, a bit at a time, until you have soft slightly runny dough.
- Tip the dough into a colander held over the pan of boiling water and rub the mixture through with the back of a ladle.
- As the dough hits the water, they will form thick squiggles like macaroni.
- They cook very quickly and will rise to the surface when ready. Scoop out using a slotted spoon and place in a greased oven dish.
- *****While the 'macaroni' is cooking,
- Heat a frying pan and add the bacon bits and garlic and fry until cooked.
- Stir in the cream, nutmeg and grated cheese, season with black pepper
- pour hot over the ‘macaroni’ and sprinkle with the Parmesan.
- Put some knobs of butter on the top to form a glaze.
- Flash under a very hot grill and serve straight away

I skipped the homemade Macaroni and used penne pasta I had. It was really really tasty, my first time having Macaroni and Cheese so I've nothing to compare it to but I'll be tinkering with this recipe in the future. Thanks for adding it!
