Ingredients
  • 1T. vegetable oil
  • 1 onion,thinly sliced
  • 1 garlic clove,chopped
  • 1/2t salt
  • 2t. curry powder
  • 1c unsweetened coconut milk
  • 1(141/2oz) can diced tomatoes,drained
  • 1T. tomato paste
  • 1lb. chicken breasts,boned,skinned and cut in 1" cubes.
  • 3c baby spinach
  • 2c hot cooked rice

Directions
  1. In a lg skillet,heat vegetable oil over med heat. Add onion,garlic and salt;cook,stirring,until softened,7 mins
  2. Add curry powder and cook,stirring,1 min. Stir in coconut milk,tomatoes and tomato paste;cook,stirring occasionally,until thickened,10 mins.
  3. Add chicken and simmer until cooked thru,about 6 min. Turn off heat Add spinach and stir till wilted,1 min
  4. Serve over hot rice

I noticed your curry recipe...my husband and I like yellow curry (med. spice) does this recipe have a bit to iot?? it looks great and we love curry

I would say this would be a very mild curry , depending on what curry powder you use. Most commercial curry powders are very mild. To make it hotter add cayene pepper, try 1/2 tsp to start with. If you want it hotter add a little at atime at the end. Yellow curry is a Thai curry that gets it's heat from the paste used and also most Thai restaurants add chile flakes at the end to get the heat (stars) you ask for. Cooked in spices taste much more complex and not as searing on the mouth.
