This is a recipe I received from Coastal Seafoods in Minneapolis.

Ingredients
  • Dashi for Miso Soup:
  • 5 cups water
  • 2 cups Bonito flakes (dried tuna flakes)
  • 1 strip Kombu
  • Miso Soup
  • 5 cups Dashi
  • 2 tbls miso paste (can use Shiro miso - has a lighter flavor)
  • 4 oz cubed tofu - medium firmness
  • 1 tbls dried wakame (black seaweed flakes)
  • garnish with a sprinkling of green onion
  • garnish with daikon slivers- optional

Directions
  1. Combine 5 cups of water and 1 strip Kombu in a pot and cook for 20 minutes below a rapid boil.
  2. Take out strips of Kombu.
  3. Add Bonito flakes and simmer for 10 minutes.
  4. Strain liquid to get out flakes.
  5. Add 5 cups of strained Dashi broth to pot.
  6. Add the Miso Soup ingredients.
  7. Simmer.
  8. Garnish and serve.

Can you make this with something other than the tuna flakes? So that its vegan?


Yes, I think you can make it without the tuna flakes, and instead you could use mushrooms to add more flavor.
