How to make it

  • Cook spaghetti in boiling water according to package directions.
  • While waiting for spaghetti, cook bacon pieces until done. I alternate between getting it crisp and using it soft. When bacon is done, drain, reserving 1/4 cup of drippings with bacon.
  • While bacon is cooking, whisk together eggs, cheese, milk and pepper. Set aside.
  • When spaghetti is cooked al dente, drain and immediately return to pan. Quickly pour egg mixture and bacon with reserved drippings over and toss together until all pasta is coated. If the spaghetti is hot, it will cook the egg. If you dawdle, you will have a slimy mess.
  • Serve immediately, garnished with a little more parmesan cheese and freshly ground black pepper.

    I make this often too -- Daughter, Son, and myself are all big-time pasta lovers (sorry hubby :)
    Try it with a bit of pancetta (diced to bits) cooked in with the bacon; I've also been known to add minced garlic, onions, or shallots (again, all minced to bits) in the bacon-frying stage....
