How to make it

  • Dissolve espresso powder in hot water.
  • Add buttermilk, oil, eggs and vanilla.
  • Whisk together.
  • Mix dry ingredients together and add to the buttermilk mixture.
  • Mix well.
  • Stir in chips and walnuts.
  • Pour into paper-lined muffin tins, 2/3 full.
  • Bake at 375 degrees for 25 minutes.
