This is a great alternative to regular chili.

Ingredients
  • Cooking spray
  • 1 cup chopped onion
  • 1 garlic clove, minced
  • 2 (15 oz) cans cannellini beans, drained and divided
  • 1 (4 oz) can of green chilis, drained
  • 2 1/4 cup chicken broth
  • 2 cups cooked chicken breast, chopped
  • 1 tsp chili powder
  • salt and pepper to taste

Directions
  1. Coat large saucepan with spray.
  2. Heat over medium-heat until hot.
  3. Add onion and garlic, saute til tender.
  4. Add 1 can of beans, chilis, broth, chicken, chili powder and salt and pepper.
  5. Mash remaining beans with fork.
  6. Add beans and chicken to pan.
  7. Bring to boil, cover, reduce heat.
  8. Simmer for 20 minutes.
  9. Great served with Mexican cornbread. :o)

I forgot to add that you can use great northern beans instead of the cannellini beans. I usually use leftover great northerns :o)
