Ingredients

How to make it

  • Heat oven to 350
  • Rub 1 tablespoon oil inside squash halfs
  • Season
  • Placerosemary sprig in each cabity
  • Place squash skin side up
  • Roast till tender about 30 minutes
  • Cool enough to handle
  • Scoop squash fleshinto the bowl of food processor
  • Pulse until evenly chopped
  • Reserve
  • Heat remaining 1 tablespoon oil in pan over medium/low heat
  • saute shallate and garlic for about 2 minutes.. do not burn garlic!
  • Add this to squash
  • Stir in cheese to thismixture
  • Warm tortilla in small skillet until soft
  • spoon 2-3 tablespoons filling down center
  • Roll into cylinder, close with toothpick
  • Deep Fry in oil until crisped and brown about 4 minutes
  • Remove with ladle
  • Drain on paper towel.. or even better.. brown paper bags
  • Lightly salt.

    Wow, this sounds amazing! I grew some butternut squash this year, and have a lot to experiment with. This one seems like it will be a keeper.

    I am saving this recipe!! I have a good friend who is an AWESOME gardener and always grows butternut squash....she gives me tons, but I never know what to do with it!! This sounds great! We will have to give it a try! Thanks for sharing!
