BUTTERNUT SQUASH TAQUITOS

- 2 tablespoons olive oil shopping list
- vegtable oil for frying shopping list
- 1 medium butternut squash halved lengthwise and seeds removed shopping list
- salt to taste shopping list
- 2 sprigs rosemary shopping list
- 1 tablespoom shallot or green onion minced fine shopping list
- 3 cloves garlic minced fine shopping list
- 1 cup Cotija cheese.. (mexican style cheese, usually goat) shopping list
- 4 8 inch tortillas shopping list
How to make it
- Heat oven to 350
- Rub 1 tablespoon oil inside squash halfs
- Season
- Placerosemary sprig in each cabity
- Place squash skin side up
- Roast till tender about 30 minutes
- Cool enough to handle
- Scoop squash fleshinto the bowl of food processor
- Pulse until evenly chopped
- Reserve
- Heat remaining 1 tablespoon oil in pan over medium/low heat
- saute shallate and garlic for about 2 minutes.. do not burn garlic!
- Add this to squash
- Stir in cheese to thismixture
- Warm tortilla in small skillet until soft
- spoon 2-3 tablespoons filling down center
- Roll into cylinder, close with toothpick
- Deep Fry in oil until crisped and brown about 4 minutes
- Remove with ladle
- Drain on paper towel.. or even better.. brown paper bags
- Lightly salt.
