Ingredients
  • 1 onion, chopped
  • 1 butternut squash (approx. 1 lb. peeled and de-seeded, and if you're lucky you might find one already cut at Trader Joe's like I did)
  • 2 cups apple cider
  • 1 cup water
  • 1/2 tsp. salt

Directions
  1. Place onion, squash, apple cider and water in a pot. Bring to a boil and simmer until squash is tender (I simmered for about an hour and it turned out quite well). Puree in a blender, add salt and serve.

I love butternut squash soup - though not so much the calories and fat when made with cream! have you tried adding some cumin, garlic and curry? I'm sure that would help the taste, and wouldn't impact the WW points.


Jealeepoms is right... think spices! I like to add Thyme and sage.. I love savory with squash..
