How to make it

  • Place onion, squash, apple cider and water in a pot. Bring to a boil and simmer until squash is tender (I simmered for about an hour and it turned out quite well). Puree in a blender, add salt and serve.

    I make a zero point weight watchers butternut squash,
    2 onions, 4garlic, 2 carrots, 3 sticks of celery, thime, chopped finely, sweat for 15 mins until moist,these extra ingreedients give it extra flavour. then add your chicken stock, and bnut squash. yummers.

    jealeepoms is right... think spices! I like to add Thyme and sage.. I love savory with squash..

    I love butternut squash soup - though not so much the calories and fat when made with cream! have you tried adding some cumin, garlic and curry? I'm sure that would help the taste, and wouldn't impact the WW points.
