Shrimp Fritters

- 1/2 cup finely chopped onion shopping list
- 2 tbsp. chopped flat leaf parsley shopping list
- 1 tbsp. finely chopped basil shopping list
- 1 tbsp. finely chopped chives shopping list
- 6 oz. chopped shrimp (fresh or frozen is better than canned) shopping list
- 1 1/2 tsp. sour cream shopping list
- 1 tsp. grated lemon zest shopping list
- pinch cayenne shopping list
- 1 cup all-purpose flour shopping list
- 1/4 tsp. baking soda shopping list
- 1/4 tsp. baking powder shopping list
- 1 cup cold water shopping list
- salt and freshly ground pepper shopping list
- vegetable oil for frying shopping list
How to make it
- Combine onion, parsley, basil, chives, shrimp, sour cream, lemon zest, cayenne, flour, baking soda and baking powder in a bowl and stir until well incorporated. Stir in water to make a thick batter. Season with salt and pepper. Cover and refrigerate for 3 hours.
- Add 3/4 inch-deep vegetable oil in a wok, deep fryer or deep skillet. Heat on medium heat until the temperature reaches 325ºF. on a deep-fry thermometer.
- Drop 1 tablespoons of batter at a time and fry for 1 1/2 to 2 minutes or until golden and cooked through. Makes about 24 fritters.
