How to make it

  • Combine onion, parsley, basil, chives, shrimp, sour cream, lemon zest, cayenne, flour, baking soda and baking powder in a bowl and stir until well incorporated. Stir in water to make a thick batter. Season with salt and pepper. Cover and refrigerate for 3 hours.
  • Add 3/4 inch-deep vegetable oil in a wok, deep fryer or deep skillet. Heat on medium heat until the temperature reaches 325ºF. on a deep-fry thermometer.
  • Drop 1 tablespoons of batter at a time and fry for 1 1/2 to 2 minutes or until golden and cooked through. Makes about 24 fritters.
