Addictive shrimp munchies. Can be served on top of a salad for lunch or piled up on a platter for an appetizer. Cooking time includes 3 hours chilling time.

Ingredients
  • 1/2 cup finely chopped onion
  • 2 tbsp. chopped flat leaf parsley
  • 1 tbsp. finely chopped basil
  • 1 tbsp. finely chopped chives
  • 6 oz. chopped shrimp (fresh or frozen is better than canned)
  • 1 1/2 tsp. sour cream
  • 1 tsp. grated lemon zest
  • pinch cayenne
  • 1 cup all-purpose flour
  • 1/4 tsp. baking soda
  • 1/4 tsp. baking powder
  • 1 cup cold water
  • salt and freshly ground pepper
  • vegetable oil for frying

Directions
  1. Combine onion, parsley, basil, chives, shrimp, sour cream, lemon zest, cayenne, flour, baking soda and baking powder in a bowl and stir until well incorporated. Stir in water to make a thick batter. Season with salt and pepper. Cover and refrigerate for 3 hours.
  2. Add 3/4 inch-deep vegetable oil in a wok, deep fryer or deep skillet. Heat on medium heat until the temperature reaches 325ºF. on a deep-fry thermometer.
  3. Drop 1 tablespoons of batter at a time and fry for 1 1/2 to 2 minutes or until golden and cooked through. Makes about 24 fritters.
