This is a festive holiday banana bread that has fresh, dried and candied fruit in it but is not like fruit cake.. It's a nice bread to have with a cup of coffee.. I copied this recipe out of a magazine when I was in my teens.. that's more years ago ... More

Ingredients
  • 1 3/4 cup sifted flour
  • 2/3 cup sugar
  • 3 teasp. baking powder
  • 1/2 teasp salt
  • 1/4 teasp baking soda
  • 1/3 cup butter
  • 1 cup mashed very ripe banana (2-3)
  • 2 eggs
  • 1/4 cup raisins
  • 1/2 cup walnuts chopped
  • 1/4 cup candied citron chopped
  • 1/4 cup candied orange peel chopped
  • 1/4 cup candied cherries chopped
  • 1/4 cup candied pineapple chopped

Directions
  1. In a large bowl: mix together flour, sugar, baking powder, salt, and baking soda
  2. add butter. cut butter in until it looks like coarse crumbs.
  3. add banana and eggs
  4. with mixer beat on low speed for 2 mins
  5. add nuts, raisins and candied fruit. mix until well blended
  6. pour into a well greased 9x 5 loaf pan
  7. bake at 350' for 1 hour and 10 mins.
  8. remove from pan and let cool on a cookie rack
  9. when cool wrap in first plastic wrap and then with foil
