Microwave Peanut Butter Fudge Recipe
This is a tasty, REALLY easy fudge recipe. Even I can make it, and I'm notorious for my "failed fudge"!!! From Alton Brown on Food Network.

Ingredients
  • 1 cup butter, plus more for greasing
  • 1 cup peanut butter
  • 1 tsp vanilla
  • 1 pound powdered sugar

Directions
  1. Microwave butter and peanut butter for 2 minutes on high.
  2. Remove and stir.
  3. Microwave on high for 2 more minutes.
  4. Add vanilla and powdered sugar and stir to combine. This takes a little work to get incorporated.
  5. Spread into a buttered 8x8 pan lined with waxed paper.
  6. Place a second piece of waxed paper on the surface of the fudge.
  7. Refrigerate until cool.
  8. Cut into 1" cubes and store in an airtight container for up to a week. (Yeah, right!)

OK, guys, this recipe DID set up and it has a good taste, but it's REALLY flaky, and I don't like that in fudge. Maybe less powdered sugar next time? I was thinking when I put it in the dish that is was a little too thick, but I wasn't sure until it set up for a couple of hours. Any tips from anyone? My chocolate fudge was really creamy, so maybe I will try PB chips in that one next time!!
