Mini Hunza Pies Recipe
I had to come up with this recipe because I love Hunza pie but my partner won't eat anything green, spinache being one of the main components. I make these and freeze them so I can have one when ever I want.

Ingredients
  • 1 packet Filo pastry
  • Butter
  • 12 eggs
  • 1cup of milk/cream
  • Nutmeg
  • 1 bunch of spinach
  • 1 Large onion
  • 3 cloves of garlic
  • 1 cup of pine nuts
  • 1/4 cup sesame seeds
  • 1 buch of fresh dill

Directions
  1. Pre heat the oven to a moderate heat, and grease a 12 ( large) muffin tin with butter.
  2. Cut your packet of filo pastry into quatres (squares).Melt some butter, and with a pastry brush spread butter on a layer of filo.
  3. Layer the filo and butter into each muffin tin until they are 4 or 5 deep. This works best if you turn each layer a little so none of the courners match up.
  4. In a pan use whats left of the melted butter, add in the minced garlic cloves pine nuts and diced onion. Make sure every thing is coverd in the butter.
  5. Roughly chop the spinache and add it in to the pan. Cook this down until everything is soft and halfed in size.
  6. Take off the heat and add in the chopped Dill.
  7. In a large pouring jug break all ofthe eggs, add milk, salt, pepper and a pinch of nutmeg. Wisk well.
  8. Pour 1 rough table spoon in to each pastry covered muffin tin. Add in some of the spinach mix and layer between the eggs and spinache mix until each in full.
  9. Pull all of the over hanging pastry courner roughly forward springle with sesame seeds.
  10. Put in the oven untill golden brown. Enoy.

I like the method of making little ones instead of one big pan full...sounds great for parties/sharing.


This sounds great tasting, and I love the idea of preparing small servings -- can anyone say "brown bag"?
