Seafood Stew Recipe
quickie version of my own favourite mediterranean stew - looks like a lot of ingredients but easy peasy to prepare! Delicious with fresh crusty bread and butter

Ingredients
  • 400gm can chopped tomatoes
  • 1 medium onion finely sliced
  • handful frozen mixed sliced peppers
  • 1 stick celery "julienned"
  • 1/2 teaspoon crushed garlic or garlic puree
  • 2 anchovy fillets (optional)
  • pinch mixed dried herbs
  • pinch chilli powder
  • glass of red wine
  • 6oz fillet firm white fish (I use frozen coley portion)
  • 1 pack mixed cooked seafood ( mussles, prawns, squid, cockles etc.)
  • 10 Black Olives
  • olive oil to taste
  • fresh ground black pepper
  • chopped fresh parsley

Directions
  1. Heat olive oil in a saucepan and add the onion and celery, saute for 2 mins.
  2. Add garlic, anchovies, mixed herbs and saute for 1 min.
  3. Add tomatoes, red wine, mixed peppers and olives, allow to boil then cover with a tight lid and simmer on low heat for about 20mins.
  4. Add the fish and the broccoli and continue to simmer until fish is almost cooked.
  5. Add seafood and heat through.
  6. Season with freshly ground black pepper.
  7. Serve in bowls with fresh parsley sprinkled over.
