Almond Fudge Cake

- 4 egg whites shopping list
- 1c fat free milk shopping list
- 3/4c water shopping list
- 1/2c unsweetened applesauce shopping list
- 1t. almond extract shopping list
- 13/4c all purpose flour shopping list
- 11/2c. sugar shopping list
- 3/4c. baking cocoa shopping list
- 11/2t. baking powder shopping list
- 11/2t baking soda shopping list
- 1/2t. salt shopping list
- 1/4c miniature semi-sweet chocolate chips shopping list
- 2c fresh or frozen unsweetened raspberries shopping list
- 1T. sugar shopping list
- 1t. lemon juice shopping list
- 3/4c reduced-fat whipped topping shopping list
- 12 fresh raspberries shopping list
How to make it
- In a lg. mixing bowl,beat egg whites,milk,water,applesauce and extract until well blended. In a small bowl,combine the flour,sugar,cocoa,baking powder,baking soda and salt;gradually beat into egg white mixture until blended(batter will be thin).
- Pour into a 9" springform pan coated with cooking spray. Sprinkle with chips. Place pan on a baking sheet.
- Bake at 325 for 55-60 mins. or until a toothpick inserted near the center comes out clean. Cool for 30 mins. Carefully run a knife arouns edge of pan to loosen; remove sides of pan. Cool completely
- For sauce,puree the raspberries in a food processor or blender;strain to remove seeds. Stir in sugar and lemon juice. spoon sauce onto dessert plates;top with cake wedges. Garnish each with 1T whipped topping and a raspberry
