Striped cappucino cheesecake

- Crust layer: shopping list
- 1 cup coffee chocolate biscuits, crushed (I used chocolate chip cookies crumbs). shopping list
- 60g butter, melted shopping list
- Middle layer: shopping list
- 250g cream cheese, softened shopping list
- 1/3 cup caster sugar shopping list
- 1 1/2 tablespoons instant coffee, dissolved in 1 tablespoon boiling water shopping list
- 1 1/2 teaspoons gelatin, dissolved in 1 1/2 tablespoons boiling water shopping list
- 1/2 cup cream shopping list
- Top layer: shopping list
- 250g cream cheese, extra, softened shopping list
- 1/3 cup caster sugar shopping list
- 3 teaspoons vanilla essence shopping list
- 1 1/2 teaspoons gelatin, dissolved in 1 1/2 tablespoons boiling water shopping list
- 1/2 cup cream, whipped shopping list
- Drinking chocolate, to dust shopping list
How to make it
- Combine the biscuit crumbs and butter and press into the base of a greased and base-lined 20cm spring form tin. Chill.
- Beat the cream cheese and sugar using an electric mixer until smooth. Beat in the coffee and gelatin mixtures and cream until well combined. Pour over the prepared base and chill until just set.
- Beat the remaining cream cheese, sugar and vanilla until smooth. Beat in the gelatin mixture. Fold in the whipped cream and pour over the coffee layer. Refrigerate until set. Dust with drinking chocolate for decoration.
