In New Mexico chile is eaten with warm flour tortillas.
You may use mild chile pods, especially if you like chile that is not too hot!

If you take the chile after it has going through the blender and pass it through a strainer; it will take out the skins from the chile pods and give a much smoother sauce at the end. Enjoy.
