These are an old recipe from my Norwegian uncle. They are VERY similar to pan-fried crepes, but a little sweeter and dressed as a pancake.

Ingredients
  • 4 eggs
  • 3 cup milk
  • 2 cup flour
  • 6 Tbsp melted butter
  • 1/2 cup sugar
  • 2 tsp vanilla
  • Oil for frying in pan.
  • sugar and syrup for topping.

Directions
  1. Put 1/2 tsp oil in pan and heat over medium heat.
  2. melt butter, and add milk and eggs.
  3. stir in sugar and flour, until mixture is smooth. add vanilla.
  4. Pour mixture onto hot oiled pan, one at a time.
  5. These take only a few minutes each to cook, as they are very thin!
  6. place cooked pancake on plate and sprinkle with sugar. roll up and drizzle with maple syrup.
