Chicken Blackeyed Peas And Rice Recipe

Wonderfully easy dish you would not have thought to add the legumes. This dish can be "Cajunized" by adding some zippy blackening seasonings. You can also chose some red or black beans instead of the peas.

Ingredients
  • T Olive oil
  • 1 C chopped, red onion
  • 1 1/2 Lb chicken breast tenderloin
  • 2 cloves garlic, minced
  • 1/4 C water
  • 1 14 oz. can chicken broth
  • Pepper to taste
  • 1/4 tsp crushed red pepper
  • 1/2 tsp sage
  • 3/4 C "uncooked" rice
  • 1 15 oz can black eyed peas

Directions
  1. Heat oil in a 12" skillet
  2. Add onion and saute about 4 min until tender
  3. Add garlic & chicken cooking another 4 minutes turing as necessary
  4. Stir in broth, water peppers & seasonings. Bring to a boil.
  5. Stir in rice, cover, reduce to simmer about 10 min until rice is almost tender.
  6. Stir in black eyed peas, cover & cook another (appx) 10 minutes or until liquid is just absorbed.

For those who don't know "blackened" is not a seasoning it's a cooking method. That said pease do not beat me with a wet noodle-this is a lovely recipe. Thank you.


Just to Clarify: "Blackening seasonings", is just a very general term. It refers to seasonings used in mainly Cajun dishes and primarily utilizes cayenne pepper.
