A tart with mushrooms that smells like the Greek Summer

Ingredients
  • 375 gr. puff pastry
  • 25 gr. butter
  • 2 shallots (finely chopped)
  • 150 gr. white mushrooms
  • 1 handful of dried mushrooms (soaked in warm water for 10 min)
  • 3 eggs
  • 125 gr. katiki or other cream cheese
  • 1 handful finely grated kefalotiri or parmesan
  • 1 handful fresh thyme leaves
  • 6 thin slices of Lountza or other kind of ham or 15 slices of sausages

Directions
  1. Pre-heat the oven to 200 C.
  2. Grease a tart dish of approx. 20 cm. in diameter and form the pastry to take the shape of the dish.
  3. In a frying pan melt the butter, add the shallots and fry until golden brown and softened through. Add the fresh mushrooms to the pan and cook until any liquid that might form has evaporated.
  4. Strain the soaked mushrooms and add them to the cooked ones.
  5. In the meantime, beat the cream cheese and eggs with a mixer, add the parmesan and thyme. Fold in the mushrooms.
  6. Pour this filling into the dish and place in the oven on a medium height and bake for 20 minutes.
  7. Remove from the oven put the ham slices on top and bake for further 5 minutes.
