How to make it

  • Pre-heat the oven to 200 C.
  • Grease a tart dish of approx. 20 cm. in diameter and form the pastry to take the shape of the dish.
  • In a frying pan melt the butter, add the shallots and fry until golden brown and softened through. Add the fresh mushrooms to the pan and cook until any liquid that might form has evaporated.
  • Strain the soaked mushrooms and add them to the cooked ones.
  • In the meantime, beat the cream cheese and eggs with a mixer, add the parmesan and thyme. Fold in the mushrooms.
  • Pour this filling into the dish and place in the oven on a medium height and bake for 20 minutes.
  • Remove from the oven put the ham slices on top and bake for further 5 minutes.

    Those dried mushrooms add so much of an earthy flavor.
