Mushroom and Ham Tart

- 375 gr. puff pastry shopping list
- 25 gr. butter shopping list
- 2 shallots (finely chopped) shopping list
- 150 gr. white mushrooms shopping list
- 1 handful of dried mushrooms (soaked in warm water for 10 min) shopping list
- 3 eggs shopping list
- 125 gr. katiki or other cream cheese shopping list
- 1 handful finely grated kefalotiri or parmesan shopping list
- 1 handful fresh thyme leaves shopping list
- 6 thin slices of Lountza or other kind of ham or 15 slices of sausages shopping list
How to make it
- Pre-heat the oven to 200 C.
- Grease a tart dish of approx. 20 cm. in diameter and form the pastry to take the shape of the dish.
- In a frying pan melt the butter, add the shallots and fry until golden brown and softened through. Add the fresh mushrooms to the pan and cook until any liquid that might form has evaporated.
- Strain the soaked mushrooms and add them to the cooked ones.
- In the meantime, beat the cream cheese and eggs with a mixer, add the parmesan and thyme. Fold in the mushrooms.
- Pour this filling into the dish and place in the oven on a medium height and bake for 20 minutes.
- Remove from the oven put the ham slices on top and bake for further 5 minutes.

I am so glad I found this while visiting Fungus Among Us I live for recipes like this one.
Those dried mushrooms add so much of an earthy flavor.
