These phyllo shells are filled with tomatoes, Jarlsberg cheese, and seasonings, baked to a golden brown. The perfect hors d’oeuvre.

Ingredients
  • 3/4 cup diced tomatoes
  • 2 teaspoons red onions, finely chopped
  • 2 teaspoons fresh basil, finely chopped
  • 1/2 teaspoon seasoned salt
  • 1 package mini phyllo shells (found in the freezer section)
  • 1/2 cup shredded jarlsberg cheese
  • 1/4 cup mayonnaise
  • real bacon bits

Directions
  1. Preheat oven to 350°.
  2. Place diced tomatoes in a colander.
  3. Sprinkle with onions, basil, seasomed salt and toss.
  4. Allow to drain, stirring occasionally and pressing very gently a few times to coax out the juices.
  5. Fill phyllo shells with 1 tablespoon of tomato mixture.
  6. Stir together mayo and cheese in a small bowl.
  7. Put a teaspoonful of mayo mixture on top.
  8. Sprinkle with bacon bits.
  9. Bake tomato filled shells 10 minutes.
  10. Serve hot.
  11. May be prepared ahead and refrigerated. Reheat before serving.
