A friend mentioned ginger molasses cookies, and I instantly had to google up a recipe. The chosen victim had sugar cut in half and molasses doubled; could cut sugar further.

Ingredients
  • 2.25 cups flour
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 12 Tbsp butter
  • 0.5 cups granulated sugar
  • 2 Tbsp fresh ginger, peeled and grated
  • 0.5 cups molasses
  • 1 egg

Directions
  1. Sift or whisk together flour, soda, and salt.
  2. Cream butter, sugar, and ginger.
  3. Beat egg and molasses into butter/sugar/ginger.
  4. Add dry mix to wet, stir to combine.
  5. Chill.
  6. Preheat oven to 350F.
  7. Drop cookies onto greased cookie sheets.
  8. Optionally dust cookie tops lightly with sugar.
  9. Bake 12-15 minutes.
