Apricot Cranberry Bread

- 2 cups flour shopping list
- 1 cup sugar shopping list
- 1 TBSP. baking powder shopping list
- 1 cup dried apricots, chopped shopping list
- 1 cup cranberries shopping list
- 1/2 cup walnuts shopping list
- 2 eggs, beaten slightly shopping list
- 1 cup milk shopping list
- 1/4 cup butter, melted shopping list
- 1 teasp. grated lemon peel shopping list
How to make it
- in a large bowl: mix flour, sugar, baking powder
- add apricots, cranberries and the nuts. toss lightly to cover fruit
- in a small bowl: mix eggs, milk, melted butter and the lemon peel
- pour over the flour mixture
- stir just until the dry ingredients are moistened. do not over mix
- pour into a greased 9x5 inch loaf pan
- bake at 350' F for 60 - 70 mins or until toothpick come out clean
- cool 10 mins in pan then turn onto a rack

I really LOVE to bake quick breads, they are perfect for my son's breakfast and great with tea. I'm sure I will tweak with it a bit, but the cranberries and apricots together will definitely be staying! what a great combo.
