How to make it

  • in a large bowl: mix flour, sugar, baking powder
  • add apricots, cranberries and the nuts. toss lightly to cover fruit
  • in a small bowl: mix eggs, milk, melted butter and the lemon peel
  • pour over the flour mixture
  • stir just until the dry ingredients are moistened. do not over mix
  • pour into a greased 9x5 inch loaf pan
  • bake at 350' F for 60 - 70 mins or until toothpick come out clean
  • cool 10 mins in pan then turn onto a rack

    I really LOVE to bake quick breads, they are perfect for my son's breakfast and great with tea. I'm sure I will tweak with it a bit, but the cranberries and apricots together will definitely be staying! what a great combo.
