Ingredients

How to make it

  • Chop med onion
  • cut up green onion with scissors into small pieces
  • cut up parsely with scissors into small pieces without stems
  • chop garlic
  • put these onto a dish set it aside for later use.
  • Slice Andouille
  • Slice japaleno sausage
  • set this onto a dish .. for later use.
  • Pre heat Oven @ 450 degrees, After the oven is heated
  • Pour Oil into your Pot then place your Ponce' inside of the pot with the lid on the pot and place into oven.
  • Place a timer on for 20 minutes or until brown then open oven turn over the Ponce' , add Andouille, Japapeno Sausage,
  • then place timer another 20 minutes or until brown.
  • not burning.... Once the meat has browned
  • Add 1/4 of all onions, parsely, garlic. Saute' around with meat . NOT burning them....If you have a Jar of Japaleno's sliced use the vinger from that use about 1tbsp to keep the meat from burning .. then add alittle water (1/4 cup). Bake for a total 2 hours. (remember that you used 40 minutes in the browning time) so you have a remaining 80 minutes. to finish baking.
  • After this is done .
  • Place pot onto top of stove .
  • Take Ponce' out place on a platter.
  • the remaining meat Add the remaining onions, parsely, garlic.
  • put heat on med.
  • saute' onions, parsely, garlic
  • then add some water about 1 to 2 cups but do this little at a time.
  • you are making a gravey for your Rice.
  • this takes about 15 minutes on the top of the Stove.
  • You may use a gravey thickner like Wonder Gravey Thickner.Shake and Blende. or Flour if you don't have the shake and blende..this is optional if you like a thicker gravey.
  • After this Slice Ponce'
  • Ready to serve with your other veggies, corn bread, drink, desert

    smoked pounce'/paunce with greens
    A whole pork stomach filled with ground sausage meat, green onions, onions, and parsley then smoked over hardwood.

    OK... I'm going to ask.. what is a pounce? The only pounce I know is a cat treat. Enlighten me please.
