This dish is great with the Gravey from the Ponce' on top of Rice, Serve with Veggies...like corn, green beans..mustard greens...Corn bread...for desert Banana Pudding..

Ingredients
  • 1 -4 lb Smoked Ponce'
  • 1 med Onion
  • I bunch of Green Onion
  • 1 cup of Parsely
  • 1 med garlic
  • Slap Yo' Mama to taste (about 1 tsp)
  • 1/4 cup Cooking Oil
  • 1 lb pack andouille
  • 1 lb japaleno sausage
  • Roaster Pot for oven use. or you can use a large black pot.

Directions
  1. Chop med onion
  2. cut up green onion with scissors into small pieces
  3. cut up parsely with scissors into small pieces without stems
  4. chop garlic
  5. put these onto a dish set it aside for later use.
  6. Slice Andouille
  7. Slice japaleno sausage
  8. set this onto a dish .. for later use.
  9. Pre heat Oven @ 450 degrees, After the oven is heated
  10. Pour Oil into your Pot then place your Ponce' inside of the pot with the lid on the pot and place into oven.
  11. Place a timer on for 20 minutes or until brown then open oven turn over the Ponce' , add Andouille, Japapeno Sausage,
  12. then place timer another 20 minutes or until brown.
  13. not burning.... Once the meat has browned
  14. Add 1/4 of all onions, parsely, garlic. Saute' around with meat . NOT burning them....If you have a Jar of Japaleno's sliced use the vinger from that use about 1tbsp to keep the meat from burning .. then add alittle water (1/4 cup). Bake for a total 2 hours. (remember that you used 40 minutes in the browning time) so you have a remaining 80 minutes. to finish baking.
  15. After this is done .
  16. Place pot onto top of stove .
  17. Take Ponce' out place on a platter.
  18. the remaining meat Add the remaining onions, parsely, garlic.
  19. put heat on med.
  20. saute' onions, parsely, garlic
  21. then add some water about 1 to 2 cups but do this little at a time.
  22. you are making a gravey for your Rice.
  23. this takes about 15 minutes on the top of the Stove.
  24. You may use a gravey thickner like Wonder Gravey Thickner.Shake and Blende. or Flour if you don't have the shake and blende..this is optional if you like a thicker gravey.
  25. After this Slice Ponce'
  26. Ready to serve with your other veggies, corn bread, drink, desert

OK... I'm going to ask.. what is a pounce? The only pounce I know is a cat treat. Enlighten me please.

Smoked pounce'/paunce with greens
A whole pork stomach filled with ground sausage meat, green onions, onions, and parsley then smoked over hardwood.


And U thought my Rattlesnake was weird... !!!!
Brahahaha...
I think this would be good... after all we do eat tripe!
