An exceptional taste of cookie. Not too sweet, but absolutely great. This is flying like mad out of the cookie jar!! This is a sandwich type of cookie. Another name for Granadilla is Passion Fruit.

Ingredients
  • 90 g butter (1/4 cup + 2 tablespoons)
  • 1 egg yolk
  • 180 ml icing sugar (2/3 cup)
  • 30 ml corn flour (2 tablespoons)
  • 30 ml custard powder (2 tablespoons) or vanilla instant pudding powder if you don't get custard powder
  • 250 ml cake flour (1 cup)
  • 125 ml self raising flour (1/2 cup)
  • 60 ml granadilla pulp (1/4 cup)
  • FILLING:
  • =======
  • Big slab white chocolate
  • grenadella pulp

Directions
  1. Cream butter, sugar and egg yolk.
  2. Mix in the corn flour and custard powder.
  3. Stir in the cake- and selfraising flour aswell as the pulp.
  4. Mix well.
  5. Put in fridge for half an hour to rest.
  6. With a cookie press, press out desired for onto a greased baking tray.
  7. Bake at 180 deg C (360 deg F) for 15 -20 minutes until golden brown.
  8. Let it cool down completely.
  9. FILLING:

  11. Melt the chocolate in a double boiler.
  12. Stir in some grinadilla pulp.
  13. mix well.
  14. Place on flat side of cookie and put another cookie on top.
  15. Place in fridge to harden.
  16. Enjoy!!

HI Lizel,Another great one..I have checked google for Grenadella,but I couldn't get any good result..I wanted to see how does it look like.


Grenadella is a fruit with a bit of sour taste. Will post some pics for you.

Those look wonderful - I'm wondering if pomegranate seeds would work for this? It's the only fruit available here in the midwest US that I can think of that has a pretty tart edible seed center. I have to give it a try...your pictures look soooooooo good! Thanks liezel!
