chickory with eggs

- 1 bunch chicory, washed, ends trimmed and cut into 2" pieces shopping list
- 1 egg, beaten shopping list
- olive oil shopping list
- salt shopping list
How to make it
- Place damp chicory in pot or pan with a cover- with just enough water to cover the bottom of the pot or pan.
- Sprinkle lightly with salt to taste- the salt is important!
- Mix the chickory to distribute the salt evenly with a pair of tongs.
- Cover and cook until the chickory is wilted and softened, stirring ocassionally, add a little water if neccessary.
- Once chicory is almost done-about 5-7 minutes-add beaten egg and stir.
- Keep stirring as the egg cooks and attaches itself to the chicory-be sure it doesn't stick to the pan.
- When egg turns a bit of a tan colour and is completely cooked, turn off the heat and drizzle a bit of olive oil over the mixture...
- Serve in a bowl with some crusty bread.
- *This soup-like dish gives you a filling, nutricious meal all in one go!
