How to make it

  • Place damp chicory in pot or pan with a cover- with just enough water to cover the bottom of the pot or pan.
  • Sprinkle lightly with salt to taste- the salt is important!
  • Mix the chickory to distribute the salt evenly with a pair of tongs.
  • Cover and cook until the chickory is wilted and softened, stirring ocassionally, add a little water if neccessary.
  • Once chicory is almost done-about 5-7 minutes-add beaten egg and stir.
  • Keep stirring as the egg cooks and attaches itself to the chicory-be sure it doesn't stick to the pan.
  • When egg turns a bit of a tan colour and is completely cooked, turn off the heat and drizzle a bit of olive oil over the mixture...
  • Serve in a bowl with some crusty bread.
  • *This soup-like dish gives you a filling, nutricious meal all in one go!
