How to make it

  • Rinse scallops and pat dry. In resealable bag, combine flour and seasoning. add scallops, toss to coat.
  • In large skillet, cook scallops in hot oil over med heat 6 minutes or until browned and opaque, turning to brown all sides. remove from skillet and keep warm.
  • Add rice and pineapple to skillet. Cook until heated through, stirring occasionally, and scraping up any browned bits from the pan. Stir in cilantro
  • Serve scallops on top of rice mixture.

    I've just recently discovered scallops, and have been trying to find some good ways to make them. I'm going to try this sometime next week, but instead of using cajun seasoning I'm going to try it with some garlic seasoning -=P
