Scallops with Pineapple rice

- 1 lb sea scallops shopping list
- 2 tbsp flour shopping list
- 1 tsp cajun seasoning shopping list
- 1 tbsp oil shopping list
- 2 1/2 cups cook rice shopping list
- 1 cand (8 oz) crushed pineapple, drained shopping list
- 1 tbsp chopped cilantro shopping list
How to make it
- Rinse scallops and pat dry. In resealable bag, combine flour and seasoning. add scallops, toss to coat.
- In large skillet, cook scallops in hot oil over med heat 6 minutes or until browned and opaque, turning to brown all sides. remove from skillet and keep warm.
- Add rice and pineapple to skillet. Cook until heated through, stirring occasionally, and scraping up any browned bits from the pan. Stir in cilantro
- Serve scallops on top of rice mixture.
