How to make it

  • Cut the potatoes into 1 inch pieces, leaving the skin on.
  • Boil in salted water until very tender
  • Drain-leaving a tiny bit of water in the pot.
  • Chop the scallions and add to the pot
  • Add the butter and mash in the warm pot with a potato masher.
  • If necessary, add a splash of chicken stock to smooth the consistency of the potatoes (if you don't have stock on hand you can just leave more salted water in the pot).
  • Add cracked pepper to taste and stir.
  • Serve warm.
