Yukon Gold Mashed Potatoes With Green Oniona

- yukon gold potatoes - 5 medium sized-scrubbed shopping list
- 2 scallions- green part only (also called green or spring onions) shopping list
- 2 tbsp butter shopping list
- Freshly cracked black pepper shopping list
- chicken stock-optional shopping list
- *ammount of scallion use can be adjusted to taste shopping list
How to make it
- Cut the potatoes into 1 inch pieces, leaving the skin on.
- Boil in salted water until very tender
- Drain-leaving a tiny bit of water in the pot.
- Chop the scallions and add to the pot
- Add the butter and mash in the warm pot with a potato masher.
- If necessary, add a splash of chicken stock to smooth the consistency of the potatoes (if you don't have stock on hand you can just leave more salted water in the pot).
- Add cracked pepper to taste and stir.
- Serve warm.
