- 1/2-3/4 cup good quality chili powder.. Mix several kinds! shopping list
- 12-15 pounds... fresh beef stomach (tripe) yep.. that's right... shopping list
- Pigs or cows feet about 3... depending on size.. and yes they sell this in the stores here! shopping list
- 2 21 ounce cans hominy.. drained shopping list
- 2-3 cloves garlic chopped shopping list
- 1 heaping tablespoon comino... (cumin) Or more to taste shopping list
- 2 large onions quartered shopping list
- 4 tablespoon salt shopping list
- 1 bunch cilantro chopped shopping list
How to make it
- Trim fat form tripe and cut into 1 inch cubes.
- Add meat and water to cover and cook over moderate heat for 3 hours
- Add onions, salt, spices, cilantro and canned hominy
- Add more water if needed
- Cook another 2-3 hours
- Mixture should bubble while cooking and cook as long as possiable.
- Remove feet...
- Serve with chopped onions and cilantro and warm tortillas..
- Now you can use dried corn... but you have to cook it for 5 hours before... canned is good!

Ok.... cant decide if i want pigs feet or cows feet.....might as well go with the cows feet as I have the stomach in the recipe already.... hahahaha.....Sounds tasty......
