TEX-MEX MENUDO Recipe
This is why I asked Mystic for her recipe.. This is real good.. but makes a ton! I, myself, have never made this one. It is from a restaurant that I am friends with owner... I have it there..

Ingredients
  • 1/2-3/4 cup good quality chili powder.. Mix several kinds!
  • 12-15 pounds... fresh beef stomach (tripe) yep.. that's right...
  • Pigs or cows feet about 3... depending on size.. and yes they sell this in the stores here!
  • 2 21 ounce cans hominy.. drained
  • 2-3 cloves garlic chopped
  • 1 heaping tablespoon comino... (cumin) Or more to taste
  • 2 large onions quartered
  • 4 tablespoon salt
  • 1 bunch cilantro chopped

Directions
  1. Trim fat form tripe and cut into 1 inch cubes.
  2. Add meat and water to cover and cook over moderate heat for 3 hours
  3. Add onions, salt, spices, cilantro and canned hominy
  4. Add more water if needed
  5. Cook another 2-3 hours
  6. Mixture should bubble while cooking and cook as long as possiable.
  7. Remove feet...
  8. Serve with chopped onions and cilantro and warm tortillas..
  9. Now you can use dried corn... but you have to cook it for 5 hours before... canned is good!

Pigs or cows feet !!!?? :()


Ok.... cant decide if i want pigs feet or cows feet.....might as well go with the cows feet as I have the stomach in the recipe already.... hahahaha.....Sounds tasty......


Try some pork neckbones for a meaty soup (5lbs)


Oh, zena824 the right stomach is cow so pigs feet is cool:)
