Three-Bean Ravioli Minestrone Soup Recipe

Ingredients
  • 1 Tbs olive oil
  • 1 lg onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1/2 tsp salt
  • 1- 10 oz box frozen green baby limas
  • 1/4 tsp pepper
  • 1- 15 oz can kidney beans, rinsed/drained
  • 2 tsp Italian seasoning
  • 1- 15 ½ oz can garbanzo beans, rinsed/drained
  • 3- 14 /12 oz cans chicken broth
  • 1- 7 oz package mini cheese ravioli
  • 2- 14 ½ oz cans diced tomatoes

Directions
  1. Cook onions, carrots, celery and garlic in olive oil in large stockpot over medium-high heat until tender, stirring often (about 10 min).
  2. Add beans, tomatoes, broth and seasonings.
  3. Reduce heat to medium, simmer for 20 minutes.
  4. While simmering, prepare ravioli according to package directions. Stir in ravioli just before serving.
  5. Serve with garlic bread.
