Moroccan Pilaf

- 2 teaspoons margarine shopping list
- 1 medium yellow onion, chopped (about 1 cup) shopping list
- 1 clove garlic, mince shopping list
- 2 1/2 cups water shopping list
- 1 cup white rice shopping list
- 1/2 cup orzo shopping list
- 1/4 cup toasted slivered almonds (optional) shopping list
- 1/4 cup golden raisins shopping list
- 1/2 teaspoon salt shopping list
- 1/2 teaspoon grated fresh ginger shopping list
- 1/2 teaspoon ground cumin shopping list
How to make it
- In a medium saucepan, melt margarine over medium heat. Add onion and garlic; saute until tender, about 5 minutes. Add water and bring to a boil.
- Stir in rice, orzo, almonds, raisins, salt, ginger and cumin. Reduce heat to low; simmer, covered, until liquid is almost absorbed, about 3 minutes.
- Place pilaf on serving plate. Fluff pilaf lightly with a fork. Serve immediately.
