Ingredients
  • 2 teaspoons margarine
  • 1 medium yellow onion, chopped (about 1 cup)
  • 1 clove garlic, mince
  • 2 1/2 cups water
  • 1 cup white rice
  • 1/2 cup orzo
  • 1/4 cup toasted slivered almonds (optional)
  • 1/4 cup golden raisins
  • 1/2 teaspoon salt
  • 1/2 teaspoon grated fresh ginger
  • 1/2 teaspoon ground cumin

Directions
  1. In a medium saucepan, melt margarine over medium heat. Add onion and garlic; saute until tender, about 5 minutes. Add water and bring to a boil.
  2. Stir in rice, orzo, almonds, raisins, salt, ginger and cumin. Reduce heat to low; simmer, covered, until liquid is almost absorbed, about 3 minutes.
  3. Place pilaf on serving plate. Fluff pilaf lightly with a fork. Serve immediately.
