Ginger Wine Chicken for One

- olive oil, small amount for sauteeing shopping list
- 1/4 cup onion, chopped shopping list
- Bone-in chicken breast, skinned shopping list
- 1/2 cup dry red wine shopping list
- 1 tablespoon soy sauce shopping list
- 1/4 teaspoon freshly grated ginger shopping list
How to make it
- Heat oil in saucepan. When hot, add onions and saute until translucent.
- Add chicken breast, meat side down, and brown on both sides.
- In a small bowl, combine remaining ingredients. Pour over chicken. Add additional wine if the bottom of the saucepan isn't well covered by the mixture.
- Bring to a fast simmer, turn down heat to low, cover and cook, stirring occasionally, for about 25 minutes, or until chicken is done.
