Ham bone soup

Ingredients
  • Ham bone - 1 or more
  • Great Northern Beans - 1 1/2 packages
  • Onion - one white
  • Serrano pepper - one
  • Celery - one stalk
  • Garlic - 2 cloves
  • Fresh Ginger - 2 slices

Directions
  1. Boil ham bone until all meat has fallen from bone.
  2. (I actually boiled 3 ham bones but only used a portion of the stock and ham}
  3. Drain ham stock in colander.
  4. Clean beans and then boil for 30 minutes.
  5. Cover beans and let set overnight.
  6. Thinly slice ginger from root and dice.
  7. Chop onion.
  8. Smash and dice garlic.
  9. Thinly slice celery.
  10. Remove top and tail of pepper, slice and chop.
  11. Combine stock, beans, ham, onion, pepper, ginger, and celery in large pot.
  12. Simmer for 2 to 3 hours.
  13. Salt amd pepper to taste.
  14. Serve and enjoy!

Out standing. I didn't use the bone in ham. I used a pound of salt pork and added a cup of brown sugar. No other changes. It turned out fantastic! Thank you VERY much for sharing this.
