How to make it

  • Boil ham bone until all meat has fallen from bone.
  • (I actually boiled 3 ham bones but only used a portion of the stock and ham}
  • Drain ham stock in colander.
  • Clean beans and then boil for 30 minutes.
  • Cover beans and let set overnight.
  • Thinly slice ginger from root and dice.
  • Chop onion.
  • Smash and dice garlic.
  • Thinly slice celery.
  • Remove top and tail of pepper, slice and chop.
  • Combine stock, beans, ham, onion, pepper, ginger, and celery in large pot.
  • Simmer for 2 to 3 hours.
  • Salt amd pepper to taste.
  • Serve and enjoy!

    Out standing. I didn't use the bone in ham. I used a pound of salt pork and added a cup of brown sugar. No other changes. It turned out fantastic! Thank you VERY much for sharing this.
