GREEN AND WHITE LASAGNA This recipe came from an estate sale. I obtained it when I purchased the family collection from the Stuart Estate in Grand Saline, Texas in 1991.

Ingredients
  • 6 pieces lasagna uncooked
  • 1/2 cup chopped onion
  • 2 tablespoons butter
  • 2 tablespoons cornstarch
  • 1 tablespoon dried parsley flakes
  • 1 teaspoon dried basil crushed
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon ground nutmeg
  • 2 cups milk
  • 10 ounce package frozen chopped spinach thawed and drained
  • 1 small can sliced pitted ripe olives drained
  • 15 ounce carton ricotta cheese
  • 1 beaten egg
  • 8 ounce package shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese

Directions
  1. Cook lasagna according to package directions then drain well.
  2. Rinse in cold water then drain again.
  3. In medium saucepan cook onion in butter until tender.
  4. Stir in cornstarch, parsley, basil, garlic powder and nutmeg.
  5. Add milk all at once then cook and stir until thickened and bubbly.
  6. Stir in spinach and olives.
  7. In medium bowl stir together ricotta and egg.
  8. Add mozzarella and half of the parmesan and mix well.
  9. Preheat oven to 350.
  10. Arrange three of the lasagna pieces in bottom of greased rectangular baking dish.
  11. Top with half of the spinach mixture and half the ricotta mixture then repeat layers.
  12. Top with remaining parmesan cheese then bake for 40 minutes then allow to stand 10 minutes.
