How to make it

  • Preheat oven to 325 degrees F. Grease and flour baking sheets; set aside.
  • Mix coconut, sugar, flour and salt in large bowl.
  • Stir in egg whites and almond extract until well blended.
  • Drop coconut mixture into 36 mounds, 2 inches apart, on prepared baking sheets,
  • using about 1 tablespoonful of the coconut mixture for each mound.
  • Bake 20 min. or until edges are golden brown. Immediately remove
  • from baking sheets to wire racks. Cool completely.

    I tried these out, using different coconut, Stevia, and Egg Replacer.

    A warning to all using egg replacer, you may want to prepare a lot more egg. I ended up making Seven "egg whites" and it still wasn't enough for this recipe, so I ended up throwing in a few tablespoons of corn syrup to get the last bits of ingredients to clump together.

    Regardless of my personal difficulties, the recipe was fabulous, and it's a very good base for your own experimentation. I recommend it a thousand times over!
