Simple Bolognese Sauce

- 1 cup extra virgin olive oil shopping list
- 2 carrots, chopped shopping list
- 2 celery stalks, chopped shopping list
- 1 big onion, chopped shopping list
- 3 laurel leaves shopping list
- 2 pounds veal and pork ground meat shopping list
- 1 glass good red wine shopping list
- 4 pounds tomatoes, peeled and chopped shopping list
- 2 cups water shopping list
- salt and pepper shopping list
How to make it
- In a big casserole put oil and vegetables, stirring on medium heat until onion gets transparent.
- Add meat and mix well until no pink remains.
- Pour red wine and mix again.
- Finally add tomatoes and water. Add salt and pepper to taste.
- Let cook on low heat, uncovered, for about 2 hours, until sauce becomes thick. Check again salt and pepper.
- It is perfect when used for any kind of pasta as it is and is specially good for lassagne when mixed with Béchamel sauce in a proportion of 2 parts of Bolognese and 1 part of Béchamel.
