Ingredients
  • 1 cup extra virgin olive oil
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 big onion, chopped
  • 3 laurel leaves
  • 2 pounds veal and pork ground meat
  • 1 glass good red wine
  • 4 pounds tomatoes, peeled and chopped
  • 2 cups water
  • Salt and pepper

Directions
  1. In a big casserole put oil and vegetables, stirring on medium heat until onion gets transparent.
  2. Add meat and mix well until no pink remains.
  3. Pour red wine and mix again.
  4. Finally add tomatoes and water. Add salt and pepper to taste.
  5. Let cook on low heat, uncovered, for about 2 hours, until sauce becomes thick. Check again salt and pepper.
  6. It is perfect when used for any kind of pasta as it is and is specially good for lassagne when mixed with Béchamel sauce in a proportion of 2 parts of Bolognese and 1 part of Béchamel.
