How to make it

  • Clean and dry the sea bass.
  • Deep fry in hot peanut oil until golden.
  • Separately, make the sauce; start by combining 1 c boiling water, the vinegar, ginger, sugar, salt, sherry and soy sauce.
  • Boil until the sauce reaches 230 degrees (the soft-ball stage, if you know how to make candy)
  • Thicken with water chestnut flour to the desired consistency, and serve over the fish.
