Sweet and pungent fish. If you don't have water chestnut flour I'm sure you can find something suitable. Such as rice flour.

Ingredients
  • 1/2 pound sea bass
  • peanut oil
  • 1/4 c vinegar
  • 1/2 tsp freshly minced ginger
  • 1/2 c sugar
  • 1 tsp salt
  • 1 ounce sherry
  • 4 Tbsp soy sauce
  • water chestnut flour

Directions
  1. Clean and dry the sea bass.
  2. Deep fry in hot peanut oil until golden.
  3. Separately, make the sauce; start by combining 1 c boiling water, the vinegar, ginger, sugar, salt, sherry and soy sauce.
  4. Boil until the sauce reaches 230 degrees (the soft-ball stage, if you know how to make candy)
  5. Thicken with water chestnut flour to the desired consistency, and serve over the fish.
