Canja Soup Recipe
Brazilian Chicken soup. One of the tricks is to fry the dry rice. This gives a subtle twist you don't expect. Guarnateed to make your tongue samba.

Ingredients
  • 1 whole chicken
  • chicken fat
  • salt & pepper
  • 1 onion, sliced
  • 1 clove garlic, minced
  • 1/2 c uncooked rice
  • 1/4 pound diced ham, diced
  • 1 bay leaf
  • parsley
  • 1 sprig marjoram

Directions
  1. Salt and pepper he chicken and let it stand for 30 minutes.
  2. After marinating in the dry rub, cut into pieces for frying.
  3. In the soup pot, cook the onion and garlic in the fat.
  4. Add the chicken and cover the pot; fry the chickenuntil it is brown on one side.
  5. Turn the chicken, cover again, brown the other side.
  6. Wash and drain the rice. Add the rice to the chicken with the ham, and fry a bit longer, shaking to prevent sticking.
  7. Add 2 quarts boiling water and the herbs to the pot.
  8. Simmer until the chicken is tender (2 or 3 hours), and remove the chicken and herbs.
  9. Remove skin and boes from the chicken, cut meat into pieces, and return to the pot. Serve.
